The cake is no-bake and gluten-free, and totally improvised, which means that there is a lot that will be done better next time. However, my friend was thrilled to receive it so I count that as a success.

Here's a little walk-through. Feel free to use your imagination and improvise (as I did).
:bulletgreen: STEP 1: I cooked milk rice (rice cooked in milk with a bit of sugar) and while still hot, I threw in a few bars of white chocolate to melt. Then I added crushed pistachios and green food coloring. Food coloring is awesome.
[Note to future self: When intending to make a gluten-free cake, don't cheap out on the gluten-free biscuits. Or add more chocolate, or gelatin, or something to bind it all better. Milk rice on it's own is too soft.]
:bulletyellow: STEP 2: Fruit is added. Anything seasonal or canned is good, I guess - peaches, nectarines, apricots, tangerines, pear (in my case)... Or nothing at all, if you like.
:bulletgreen: STEP 3: I cooked vanilla pudding and just as it was done I added - and this bit of improvisation I'm super proud of - I added two dashes of mead. Oh the heavenly smell (and taste).
I stirred the pudding occasionally and when it was cool enough, I added Greek yogurt with a drop of lemon juice. Then just a bit of yellow food coloring (because it's awesome) and something to 'toughen' it all up, gelatin for example.
:bulletyellow: STEP 4: Decoration. Here again, future self, don't be cheap - buy marzipan or fondant or choose a simpler picture, because really, 'drawing' in crushed pistachios is not fun.
:bulletgreen: STEP 5: Last finishing touch - refrigerate for a few hours. Last last finishing touch, eat it and feel the happiness.
